Ingredients
  

  • 2 slices Toasted whole grain bread
  • 1 oz. Red onions sliced
  • 2 oz. Plum tomatoes sliced
  • 4 oz. Smoked salmon
  • 4 oz. Cream cheese
  • 1 lb. Mixed greens
  • 1 tbsp Lemon juice
  • 1 tsp Salt
  • 1 tsp Pepper
  • Olive oil extra virgin

Instructions
 

  • Toast 4 pieces of multigrain bread (or any bread you like) in a toaster or toaster oven.

  • Slice onions into 3-4 slices.

  • Slice plum tomatoes.

  • Prepare the salad. In a bowl, combine the mixed greens, extra virgin olive oil, and squeezed lemon juice; season with salt and pepper.

  • Spread the toasted bread with cream cheese.
    4 oz. Cream cheese
  • Place tomatoes and onion slices on top.
  • Cover with smoked salmon.
