Summer Fruit Tartlets
Ingredients
- 10 Puff pastries square (3''x3'')
- 2 cups Sugar
- 3 figs
- 3 apricots
- 1 pear
- Almond cream
- 2 oz. Butter soft at room temperature
- 1 Egg at room temperature
- 1 tbsp. Sugar
- 2 oz. Almond flour
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare a baking sheet and line with parchment paper.
- Roll puff pastry in sugar on both sides.
- Place puff pastry on the baking sheet.
- Spread the puff pastry with almond cream.
- Cut fruits into thin slices. Place on top of the puff pastry and almond cream.
- Bake in a preheated oven for about 20 minutes.
- Glaze with apricot jam.

The French word “tarte” can mean “pie”, but in English a pie has a covered filling, while modern-day tarts are open. Tarts were first commonly used in the mid 16th century, and considered to be high-cuisine that were popular with nobility, whereas pies were for commoners
