Rack of Lamb
Ingredients
- 6 lbs. Rack of lamb
- 1 Jalapeno sliced
- 1 Spanish onion sliced
- 3 Plum tomatoes finely chopped
- ΒΌ lb. Cilantro finely chopped
- 2 cups Tomato juice
- 2 cups Sparkling water
- 1 tbsp. Ground coriander
- 1 tbsp. Kosher salt
- 1 cup Olive oil extra virgin
Instructions
- Slice and separate the racks of lamb.
- Chop cilantro and tomatoes.
- Slice jalapeno and onions.
For the marinade
- Combine tomatoes, onions, jalapeno, cilantro, ground coriander, salt, ground black pepper, tomato juice, sparkling water, and extra virgin olive oil. Mix well.
- Place lamb racks in the marinade mix.
Seal and refrigerate overnight
- Grill for about 6 minutes on each side.
