Ingredients
  

  • 6 lbs. Rack of lamb
  • 1 Jalapeno sliced
  • 1 Spanish onion sliced
  • 3 Plum tomatoes finely chopped
  • ΒΌ lb. Cilantro finely chopped
  • 2 cups Tomato juice
  • 2 cups Sparkling water
  • 1 tbsp. Ground coriander
  • 1 tbsp. Kosher salt
  • 1 cup Olive oil extra virgin

Instructions
 

  • Slice and separate the racks of lamb.
  • Chop cilantro and tomatoes.
  • Slice jalapeno and onions.

For the marinade

  • Combine tomatoes, onions, jalapeno, cilantro, ground coriander, salt, ground black pepper, tomato juice, sparkling water, and extra virgin olive oil. Mix well.
  • Place lamb racks in the marinade mix.

Seal and refrigerate overnight

  • Grill for about 6 minutes on each side.
