Fun Fact:
Aioli is found in the cuisines of the northwest Mediterranean, from Andalusia to Calabria. The name itself means “garlic and oil” in the Catalan and Provençal dialects, because in its simple and basic form, it’s a cold sauce consisting of an emulsion of garlic and olive oil.
