Preheat the oven to 350°F (175°C).
Dice tomatoes into cubes to get rid of the seeds.
3 oz. Tomatoes
Coat the muffin pan with baking spray.

Place diced tomatoes on the bottom of the muffin, and add whole leaf spinach and lobster meat.
6 Spinach leaves, 3 oz. Tomatoes, 10 oz. Lobster meat
Top egg whites with mozzarella cheese and stir thoroughly.
3 cups Egg whites, 3 oz. Mozzarella cheese
Season with salt and ground black pepper.
1½ tsp Ground black pepper, 1½ tsp Salt
Bake in a preheated oven for 17 minutes.
Cool for 10 minutes before slicing.
