Ingredients
  

  • 3 cups Egg whites
  • 10 oz. Lobster meat
  • 6 Spinach leaves
  • 3 oz. Tomatoes diced
  • 3 oz. Mozzarella cheese shredded
  • tsp Salt
  • tsp Ground black pepper
  • Baking spray

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Dice tomatoes into cubes to get rid of the seeds.

  • Coat the muffin pan with baking spray.

  • Place diced tomatoes on the bottom of the muffin, and add whole leaf spinach and lobster meat.
    6 Spinach leaves, 3 oz. Tomatoes, 10 oz. Lobster meat
  • Top egg whites with mozzarella cheese and stir thoroughly.

  • Season with salt and ground black pepper.

  • Bake in a preheated oven for 17 minutes.
  • Cool for 10 minutes before slicing.
