Instructions
Slice and separate the racks of lamb.
Chop cilantro and tomatoes.
Slice jalapeno and onions.
For the marinade
Combine tomatoes, onions, jalapeno, cilantro, ground coriander, salt, ground black pepper, tomato juice, sparkling water, and extra virgin olive oil. Mix well.
Place lamb racks in the marinade mix.
Seal and refrigerate overnight
Grill for about 6 minutes on each side.
