Toast 4 pieces of multigrain bread (or any bread you like) in a toaster or toaster oven.

Slice onions into 3-4 slices.

Prepare the salad. In a bowl, combine the mixed greens, extra virgin olive oil, and squeezed lemon juice; season with salt and pepper.

Spread the toasted bread with cream cheese.
4 oz. Cream cheese
Place tomatoes and onion slices on top.
Cover with smoked salmon.
